Evie's Tuesday Tip week 6: Seasoning meat & fish

Always make sure to season with an even spread to avoid clumping or drying.

Why not try some of the amazing premixed stuff on offer? I really like the chilli flakes and garlic granules mix that come in a grinder. Jamie Oliver does a fab lemon, bay and thyme which will transform any chicken dish. Look out for these grinders, they really are a gift in your kitchen and can transform chicken, turkey and fish.   I also grind them into stir-fries and other dishes.

Just read the labels to make sure there are no nasty additives or sugar added. I've found the brand Suma to be excellent; it's available in health food shops. Be careful with fish though as sometimes all a white fish needs is a squeeze of lemon.
