This week I’ve chosen to do something I make a lot, in fact I think I do it as a starter the first time anyone comes round for dinner (now all my friends are thinking – yup she’s made that for me!) But why wouldn’t I make something that has the wow factor, is clean and easy to make? In fact I usually make it up earlier in the day and just stack it before we eat. Avocado goes brown after about 2-4 hrs so best to do this just before you eat it to keep the colour vibrant, or if you can’t make sure to keep it covered as it’s the air which causes the discolouring.
You will need:
- Cucumber (optional)
- Spring onion
- Prawns (shrimps)
- Organic Mayonnaise (optional)
- Lemon Juice (optional)
- Salt & pepper
- A cookie cutter / chef’s ring
My ring was about 4” so I used ½ tomato, ½ inch of cucumber, 1 spring onion, 40g of prawns and a teaspoon of mayo.
Dice the cucumber, spring onion and tomato and remove the seeds. The smaller the squares the easier it is to fit in the ring. Add salt and pepper and refrigerate till later.
Cut the prawns into small pieces, add a good bit of chopped dill (fresh is best but you could use dried), then add just a squeeze of lemon juice and the mayo (mayo not essential but delicious) and refrigerate.
Mash your avocado with a fork, you can do this in advance but try and keep the air away from the avocado because it’s exposure to the air that makes it go brown.
To make the tower
Put your chef’s ring, or cookie cutter, in the middle of a plate and put tomato, spring onion and cucumber mixture in and flatten with a teaspoon, then spoon in the prawn mix and flatten again then add the mashed avocado and smooth off with a knife. I have topped mine with a king prawn, but you could use some dill, a bit of tomato and a shrimp.
To enhance the dish, I put a little bit of olive oil in a small dish and add some chopped dill. Then put the mix on a teaspoon and make drops around the tower (here I used a dipping square which is about 1” by 1” so perfect for this).
Hints, Tips & Variations
- If I overfill then I just move the ring up as I fill, and flatten the avocado with a knife when I’m done.
- A tin of white crab meat is also very nice when mixed with the prawn.
- I sometimes do this with chopped chicken & basil instead of prawn.
- Sometimes I use the cutter to make a round of smoked salmon at the bottom and add chopped smoked salmon in the prawn mix too.
There is so much you can do with this tower technique – get yourself a set of cookie cutters and start creating restaurant quality dishes in your own home.
