Last week I decided I needed to get back to MC&L basics so signed up for the 21 Day Detox, which was the thing that started me on me on my journey to becoming clean, lean & strong. As many of you will know when you join this plan you get some recipe ideas and one of them is stuffed aubergine.
I don’t really cook aubergine often so I thought I’d give it a bash, plus lots of you have been asking for veggie recipes so this one is for you! Boy am I glad I picked up the slightly odd looking shiny purple vegetable, because now I have new super versatile recipe in my collection. So big props to Jennie Gadsby for creating the dish. I have modified it a bit, because I just love food that’s bursting with flavour, so I added a bit of spice!
You will need:
- 1 aubergine
- 1 small onion
- 1 clove garlic crushed
- Quorn mince, or quinoa
- 2-3 mushrooms
- 1-2 tomatoes
- 1/4 courgette
- Veg stock
- Basil leaves
- 1.5 tsp cumin
- Salt & pepper
Cut the aubergine in half length ways and remove the centre and cut it into small chunks, as you’ll use it for the filling.
Then place the two halves on a baking tray with the skin facing up. Put a little bit of olive oil on a piece of kitchen towel and rub the skin. Place in the oven at 180C for 20 mins.
Meanwhile put the chopped veggies into a pan, or big pot and fry lightly. Remember you can swap out any of the veggies for what you may have in your fridge, but cut them small so the all cook at the same time. I used no oil to fry but rather a tablespoon of water. Add your Quorn mince and veg stock, cumin, torn basil leaves, salt and freshly milled black pepper. Put a lid on it and let it cook. If using quinoa add it once the veg is soft.
Take the aubergine out of the oven, pop it on a plate and spoon the mix in. Simple & delicious!!!
Thanks to the 21 Day Detox, which I’m 12 days into, I’m well and truly back in the game! My body fat was at 34% when I fist did it in October 2012 now I’m at 30% and its dropping closer to my goal of 27% all the time - Get in!!!
