Courgette pasta with chicken in a creamy avocado sauce

This week you'll love me because I'm showing you a dish that will fill that pasta void. Yes guys and gals we listened to you and we know you miss pasta, so we made this just for you!! I just made it for the first time this week and I love it so much I'll be making it again tomorrow.

It’s extremely filling and has that "OMG I can't believe it’s clean" feel to it! Get making it gang I know you'll love it.


Serves 2

1 avocado
2 garlic cloves
1/2 lemon juiced
Big handful basil leaves
2 tsp organic olive oil
Pinch of salt
Freshly milled black pepper

3 courgettes
1.5 tsp rapeseed oil (grape or olive oil or even just water is also good)
2 tbsp water
Small handful torn basil leaves

Poached chicken
2 chicken breasts
Bay leaf
Black peppercorns
Rock salt

 First place your chicken in a pot and cover by about 2 inches with cold water, add the bay leaf and a few peppercorns. Place uncovered on the hob and bring to the boil, then turn down and simmer for about 10 mins. After that place a lid on the pot, turn the heat off and leave to finish cooking in the residual heat. You don't want your chicken to get lost in the water so make sure the fit is quite snug.


Next place all your sauce ingredients in a mini food processor and blend until smooth, about 2 mins.


Then to make your pasta. You'll need to have a julienne vegetable peeler. If you don't have one you can make courgette ribbons with a potato peeler as a substitute, but it’s really worth investing in a julienne peeler as they're so useful, mine was about £10 from Pampered Chef but you can get them in John Lewis, Lakeland etc… I make all different types of slaw, Asian raw food salads and now pasta with mine.

Cut your courgettes into spaghetti strands and heat your wok to med/high heat. Add oil, if you're using it, to the wok and a couple of tablespoons of water, then add some torn basil leaves and move the spaghetti about with tongs to cook/steam them. You'll see them start to change colour and you’ll know they're cooked (about 2.5-3 mins).


Then cut your chicken into chunks, add to the wok with the sauce, give it a mix and you're done. Using the tongs place a big heap in the middle of of a plate and enjoy!


Next time I make this I think I'll add pine nuts.
