Creamy almond prawn curry with wild rice

This is such an important week for me with regards to food, exercise and just generally 'being good'. I run Amsterdam marathon on Sunday and I am sooooo excited and nervous at the same time. I get to run in an iconic city as part of Vodafone, the company I work for, and take part in charity raising money for the young people of Lesotho, where the young people suffering (or have families suffering) with HIV are the most severely impacted in the world. So whilst I am getting pats on the back and huge "well dones" for the training and imminent marathon, just thinking about these young people having to compromise their education, family lives and friendships to deal with the family impact of HIV really puts things into perspective.

So run up to marathon week is all about the carb loading. As a wheat intolerant person this isn't as much fun as it sounds! I've loved my MC&L way of eating for so long now and carbs have just been brown rice and sweet potato, which is perfect for me. However this week, carbs got heavy. So out came the quinoa fusilli and the rice spaghetti and any other form of gluten free pasta you could think of. By Thursday I'm thinking, no more!!! So today, I've turned to a gorgeous mix of black, red and wild rice as my carbs with a deliciously creamy (but so clean) prawn curry to help me through my carb week (I know, poor me!! I can see you all spitting at me!) I prefer my clean diary with scheduled carb meals and hope you would agree with me too. Thanks MC&L for such a sensible approach to eating!! 

This week's recipe gives you a gorgeously creamy prawn dish which is actually ridiculously clean as made with almond milk and ground almonds with an aromatic wild rice accompaniment and a surprising spicy side of savoy cabbage. Enjoy!

Creamy almond prawn curry 
Ingredients - serves 4 

  • 500g fresh or frozen prawns (my fave are Honduran prawns) 
  • 1 onion chopped 
  • 1 tsp cumin
  • 1 tsp coriander seeds
  • 3 cloves garlic minced 
  • 1 large thumb ginger grated
  • 1-2 chillies chopped
  • 1 tsp turmeric 
  • 1 tsp garam masala 
  • Salt to taste 
  • 1 cup almond milk 
  • 2 tbsp ground almonds 
  • 1 tbsp coconut oil 
  • Handful fresh coriander to garnish 


  1. Heat coconut oil in large pan with a medium heat 
  2. Add cumin seeds and coriander seeds and fry until they pop
  3. Add onion and garlic and fry until golden
  4. Add turmeric, garam masala, chilli and ginger and stir through
  5. Add almond milk and ground almonds, reduce heat to low and allow flavours to infuse and ingredients to create a spicy creamy sauce, this is the best bit… it's hard to believe such virtuous ingredients can look and smell so goooood!!! 
  6. When a thick sauce is created, throw on frozen or fresh prawns and mix through until prawns are pink
  7. Garnish with coriander and serve with rice and sides of choice 

Wild rice

  • 1 cup rice
  • 2 cups water 
  • 2 bay leaves 
  • 1 tsp ground cinnamon
  • 1 tsp garam masala
  • 1 clove
  • Salt to taste 
  1. Wash rice well
  2. Add water to rice and put on medium heat
  3. Add bay leaf, garam masala, cinnamon and clove
  4. Allow water to come to the boil and partially cover
  5. Should take approx 25 mins for water to evaporate and rice to cook but keep an eye and reduce heat/add more water as needed

Spicy cabbage 

  • 1/2 savoy cabbage sliced
  • Thumb ginger grated
  • 1 chili chopped 
  • Splash of almond milk 
  • 1/2 lemon juiced
  • 1 tbsp coconut oil
  1. Heat coconut oil
  2. Add ginger chilli and almond milk and stir through
  3. Add cabbage, mix well and drench with lemon juice 
  4. Allow savoy to wilt slightly but keep crunch - approx 5 mins. 

Throw all three on a plate and enjoy. This is a Friday night fave for me. Quicker than a takeaway, seems quite naughty yet oh so clean!
