When it comes to healthy eating for my kids, I try to get them to eat as well as possible. Although that's sometimes easier said than done, one week they like something, the next they don't!!
I'm not one for cutting food into shapes or decorating it to make it 'kid friendly', if it tastes nice they will eat it! Colour plays a vital part which is why I'm starting off with beetroot and feta soup (feta optional if you're on a MC&L programme.)
Beetroot and Feta Soup
You will need a hand blender
- 1 clove of garlic
- 3 cooked and peeled beetroot
- 1 tin of chopped tomatoes or 6 tomatoes, chopped
- 1 pint of beef or veggie stock #boilyourbones
- Bung it all into a large saucepan, simmer for 10 mins.
- Allow to cool then blend.
- Add more water or stock to get to your desired consistently.
- Serve with a sprinkle of feta or for a touch of adult luxury a drizzle of truffle oil.
Quick, healthy, fast!
If I have any beetroot spare I make this delicious salad which makes a great lunch or side option.
Beetroot and Puy Lentil Salad with Feta
- 1 cup of puy lentils
- 1.5 pints of stock (chicken or veg)
- 1 clove of garlic, smashed
- Put all ingredients into a saucepan and cook on a gentle boil for 10 mins. They will be a little firm but not mushy.
- Add more water if it starts to get dry but at the end there shouldn't be much stock left.
- Drain. Cool and place in a bowl.
- Mix in feta pieces and my fave: lightly chopped rocket leaves. However spinach, kale or parsley would all be good here.
- Dress with a glug of olive oil and lemon juice or balsamic vinegar.
