Freekeh Stuffed Peppers

Ele Barker one our wonderful MCL bloggers has been experimenting again with the newest foods in place the market and is excited to share her findings with you all.


Thank you Ele, we can't wait to make this clean meal and it is great to be able to have even more choice when eating protein and fibre.


My latest favourite "product" is Freekeh. Its a wheat product but very high in protein & fibre, so a great one to add into the diet.


Waitrose do one that is mixed with Quinoa and it is delish! I've always struggled a bit with Quinoa,  and I think perhaps the lack of texture it has but mix it with this new super food and the combination is lovely.


I've used in the MCL salmon, Quinoa bugers and it works a treat.


I've also made it into stuffed peppers and thats what I want to share with you!


Freekeh stuffed peppers


  • 1 Pepper per person

  • 1 cup of Freekeh mix- cook to packet instructions, roughly 10mins. 

  • Feta

  • Green olives , chopped roughly

  • 1 handful of Parsley, chopped

  • 1 handful of Pre cooked roasted veggies. Red onion, courgette etc




  1. Pre cook your peppers, cut in half. Remove seeds & place on a baking tray. Cook under the grill for 10 mins turning so they become slightly softened.

  2. Cook freekah, drain and place into a mixing bowl with all the other ingredients. 

  3. Pile mix into pepper halfs. Top with little more feta & grill until golden.

  4. Serve with lightly softened grated courgettes and tatziki. 

Chopped Green salad


Cook freekah to packet instructions and mix together with chopped steamed broccoli, green olives, chopped cucumber and even some feta.

Go on try freekah you will see what a fantastic versatile product it is!!
